Mini Frittata Recipe

Here's an easy recipe to help you get lots of protein and veggies. Make these in advance to ensure you have a healthy breakfast every day, or a nutrient-packed snack whenever you need it.



1/2 cup half n' half

8 large eggs

1/2 cup liquid egg whites

2 tsp. dried parsley

1/2 tsp. pepper

1/2 tsp. salt

Optional items:

Cheese (Feta is a great choice)

Veggies (spinach and red peppers work well)

Meat (such as cooked bacon)

Preheat oven to 375 degrees

Mix and scramble all the ingredients together in a bowl then fold in the optional items individually, except the cheese.

Pour about 3/4 full in a muffin tin (I like the brownie pan from Pampered Chef)

Cook for 12-15 minutes or until puffy and golden on the edges
